Simple Chicken Quesadillas
If you have a child who is a little bit particular with food, I challenge you to try these today. These quick and easy chicken quesadillas are irresistible! - Tortilla wrap
- Cooked shredded chicken
- Tomato purée
- Cooked red onion
- Grated cheese
- Black pepper
Spread a thin amount of tomato purée on one side of the tortilla wrap. Place the shredded chicken, red onion, sweetcorn and grated cheese on one side of the wrap. Sprinkle with black pepper (I always try to add some sort of spice or herb to our meals so that it gives our babies a new taste to try). Fold the wrap in half, heat both sides in a pan until the tortilla is a golden colour. Slice into strips and serve. I guarantee this will be your child’s new favourite meal!
The great thing about this recipe is that it can be easily adapted. For example, if you wanted to make a vegetarian version just substitute the chicken for aubergine or mushroom. If you make this regularly and would like to change it up a bit, try adding some chopped tomatoes or red pepper. The possibilities are endless!
